Quick Pickled Cauliflower

Why This Recipe?
It's a refreshing snack. Not too acidic for a pickle. Delicious with a beautiful yellow colour thanks to the turmeric.
Ingredients
- 1 head of cauliflower, chopped
- ½ sweet onion, sliced
- 2 cups white vinegar
- 1 cup water
- 1 cup sugar
- ¼ cup canning salt
- 1 tsp mustard seed
- 1 tsp red pepper flakes
- ½ tsp ground turmeric
Instructions
- Pack mason jars with onions and cauliflower.
- Combine vinegar, water, sugar, salt, and spices in a pot.
- Bring to a boil and simmer for 2 minutes.
- Pour hot brine into jars to submerge florets.
- Seal and refrigerate for a few hours. Lasts a couple weeks.
